This pickle is demonstrative of the creativity and commitment of the STREAT kitchen team to circular food systems and waste reduction. When using watermelon in our kitchens the rind always ended in either landfill, or post our waste audit, in our compost/worm farms. Our chefs have come up with a pickle utilising the rind - watermelon rind pickle with garden bay and allspice.
